I have been making my own yogurt in the Instant Pot for about six months. I use a 6 qt Instant Pot at home but I have a small (3 qt) Instant Pot on the boat. This morning we decided to stay one more day at Bitter Guana and move over to Black Point tomorrow. I thought today would be a good day to make my first batch of yogurt on the boat. I mixed up the powdered milk, freeze-dried starter, and water in the Instant Pot. When it was time to start the Instant Pot I discovered that this one doesn’t have a yogurt function. Oops. I went online to see if there were any work-arounds. One set of instructions suggested setting the Instant Pot on “Keep warm.” I did that for about 45 minutes then opened up the Instant Pot to check the temperature. I had to use George’s infrared temperature gun as a thermometer since I don’t have one in the galley. The temperature gun read 155°. Uh oh. It is supposed to be 110°. I had probably killed the yogurt starter. I waited until the milk cooled down to 110°, added another packet of starter, wrapped the Instant Pot in a towel, then put it in our cooler. I am hoping it will be yogurt in eight hours.

I will find out in about 3 hours if there is yogurt in the Instant Pot underneath the blanket.
While I was working on this, George was working on the watermaker again. It has become his daily routine. In the evening George receives an email from Jamie—at Rainman support in Australia—with answers to George’s questions and suggestions on what he should try next. Nothing has worked so far. We expect to get the new o-rings within a few days but neither one of us is optimistic that they will solve the problem.

Your winter is an interesting mix of a life of luxury and roughing it! I’m still trying to figure out what a watermaker is…..

DeleteA watermaker is actually a desalinator—it takes sea water and makes it into fresh water. It is how we get our fresh water.
